Something Spicy Hot Sauce


14 pounds carrots
7 yellow onions
1 1/2 pounds garlic
1 pound habanero peppers
2 1/2 Cups white vinegar
6 limes
8 tablespoons of salt

Admittedly, this quantity made a total of 74, 5 oz woozy bottles of spicy goodness, planned to be one hot party favor for this seasons epic Halloween parties. If you want to make a small quantity of hot sauce, the following measurements will be more appropriate.

2 large carrots
1/2 a yellow onion
4 cloves of garlic
2-4 habanero peppers
2 tablespoons white vinegar
1 lime
3 teaspoons of salt

Hot Sauce

Dice all of your veggies, mince the garlic
Sauté the onion until slightly translucent, then add the minced garlic
Sauté for an additional 10 minutes, then add the carrots, stir and cover
Continue cooking for another 15 minutes, then add the chopped pepper
Add vinegar, lime juice, and salt, cook for 5 min or until everything is soft enough to blend with either an immersion blender or countertop blender
Blend until completely smooth, add water as needed and adjust seasoning accordingly
